Morroccan Carrot Salad



450g carrots
Fresh mint, finely chopped
1 tbsp each lemon and orange juice
2 tbsp Udo’s Choice Oil
2 tsp raw honey or agave nectar
Pinch of Himalayan Crystal salt
1 tsp rose water

Peel thin strips of carrot. Place in serving bowl.
Sprinkle chopped mint over the carrot.
Mix together remaining ingredients, pour over and toss.
Chill for 30 mins before serving.
